AKOWA, which means collective mutual aid in the Aymara language, is a personal expression intended to grow and continue promoting Peruvian gastronomy and territory.
It was born to give an ode to our land. In addition, its concept is based on flavors and long – standing recipes and history but with a modern twist.
After graduating from San Ignacio de Loyola University and Paul Bocuse Institute Lima-Peru, Walter completed internships and certifications, which enabled him to expand his knowledge of traditional Cuisine and understand the advice given by his mother and grandmother, who are also gifted cookers. Before embarking on his trip around the world, he wanted to hone his techniques and learn the basics of other cuisines, the experience gained would help him create the concept of AKOWA in the future.
In 2016 he was invited to be the Main Chef at the Embassy of Peru in Japan, where he had the privilege and honor to represent his country through Peruvian Cuisine for 6 years in a row. Then, driven by his willingness and curiosity to pick up a little more about Japanese Cuisine and culture, he enrolled in a four-month course at Tokyo Sushi Academy in 2017.
In 2023 along with an entrepreneurial spirit and culinary art, Walter committed himself to opening his flagship restaurant, AKOWA, a contemporary and traditional Peruvian Cuisine spot in Tokyo, where he always strives for the traceability of local products, hence blending contemporary culinary techniques with local products to make up sophisticated and modern dishes.
